Recipe Review: A Whole Chicken in the Slow Cooker and Your Recommendations

Well summer is coming to an end.

But life still goes on…unfortunately (totally kidding, sort of).

As kids go back to school and/or life schedules get busier in general what recipes are your go to for weeknight dinners?

My new favorite is the simple slow cooker whole chicken from 100 Days of Real Food.

I add a lot more spices to my whole chicken and usually a little butter or olive oil, but it is still so simple and cheap.

And I follow the instructions on how to make the homemade stock from the remaining bones of the chicken (also made the slow cooker overnight).

 I find so many ways to use the shredded chicken and homemade stock which I freeze in meal-sized portions.

So let’s hear them. What are your favorite quickie weeknight meals?

PS. I promise that soon I will get back to posting recipes on a regular basis. This summer has been incredibly busy for me….aka we have been eating a lot of turkey sandwiches.

  1. well i did a new one last night because it was a crazy day. no recipe just throwing stuff in the pot but it worked :) Put chicken breasts( mine were part.frozen still) sprinkle cumin, oregano, and a dash of nutmeg. Dump 1/2 a bottle of mild salsa over top, 2 packs of pre-cooked brown rice( I never have this but it was left from Caleb’s backpacking trip) and 1 large container of chicken broth. Bake for 2 hours at 325. It was good and the kids loved it!!

  2. I love this recipe for chicken tagine since it’s so fast to throw together and then just sits there simmering for a while until we are ready for it. Plus, it uses chicken thighs so it’s cheaper than using chicken breasts. I leave out the plums and green olives since they aren’t my favorite, and I sub in ground cinnamon for the stick. We eat it over white rice (like we do with 80% of our meals=)
